You may already know what is Makgeolli.
If not, let me remember you ! Makgeolli is a drink made of rice (it contains alcohol), it's a typical drink in Korea ! Milky and a bit fizzy.
Sometimes it's flavored (I love the chestnut one *_*), it is not strong but it makes you getting drunk fast. (What a mysterious drink !)
So, Min Yong, owner of Backpackers INSIDE, decided to make Makgeolli, and after some studies, here we were, starting to boil water, cooking rice, and preparing a big jar to make it fermenting.
Started at 4pm, ended at 1am ahaha!
So we need three principal ingredients :
Rice, yeast (called "Nuruk") and water.
This "Nuruk" is a special ingredient from Korea. Actually, it is composed of dry ground rice and wheat. It is a traditional fermentation starter.
Sounds easy, but there are so many steps and hours to wait.

After preparing the rice, we have to wait a bit so it becomes cold. If you put it hot, it is gonna kill the bacterias and it won't works.
I think so. Ahah !

Few steps later, here is Min Yong kneading the mixture.
As you can see, it doesn't look really enjoyable.
At some point we were like
"No idea what I'm doing"
but after seeing that it started to fizz and that the smell was not bad, we felt a bit better.
Can't wait to taste !
After a few moment, the recipe was totally achieved, and now we have to wait ONE WEEK to finally know if it's a success !
Makgeolli is very good with some kimchi pizza, so it will be the perfect occasion for a cooking class next week :)
